Honey Harissa Baked Beans!

Beans in a rich tomato sauce served on toast with crumbled cheese, parsley and a drizzle of Yare Valley rapeseed oil.

Yare Valley’s Harissa Baked Beans (Serves 2 as a main or 4 as a side)

Our Honey Harissa paste gives Baked Beans a new lease of life in this simple and quick recipe that packs a punch.

You will need:

  • 2½ tbsp Yare Valley Cold Pressed Rapeseed Oil
  • 1 garlic clove, peeled and finely chopped
  • ½ small onion (or 1 shallot), peeled and finely chopped
  • 1 tin chopped tomatoes
  • ½-1 tbsp Yare Valley Honey Harissa (depending on how spicy you like it!)
  • ½ tsp Balsamic Vinegar
  • ½ tbsp soy sauce
  • 1 tin of your favourite beans (we used Cannellini), drained
  • Salt and pepper, to taste

Method

  1. Place a pan on a low heat, add the Yare Valley Cold Pressed Rapeseed Oil, garlic, onion, salt, and pepper, and cook very gently for 12-15 minutes or until soft and golden.
  2. Add the tomatoes, Yare Valley Honey Harissa, Balsamic Vinegar, and soy sauce. Stir well and bring to a simmer.
  3. Add the beans to the sauce and stir to combine. Cook uncovered on a low heat for around 30 minutes when the beans should be tender, the flavours have had a chance to mingle, and the sauce has thickened. If it looks like its drying out, then add a splash of water!
  4. Enjoy! Delicious served on toasted bread with a sprinkling of feta (or vegan friendly alternative) and flat leaf parsley, in a jacket potato, alongside a larger breakfast, or as a meat alternative filling for tacos or fajitas.
